I love making my own dressings. It helps control exactly what goes into my body, avoiding additives that are typically found in store bought versions. Making dressings at home also gives the freedom to tailor a dressing to your preference.
This take on a Greek dressing is slightly tangy from the vinegar and mustard and takes a nice earthly flavor from the dried herbs. I've used this recipe on salads of all types - green salads, pasta salads, and quinoa salads! Just add some olives and feta cheese to transform any salad to a classic Mediterranean favorite!
Makes about 1 cup
Prep Time: 5 minutes
- 1/2 cup olive oil
- 1/4 cup red wine vinegar
- 2 tbsp balsamic vinegar
- 2 tbsp fresh lemon juice or 1/2 lemon
- 1 tbsp dried herbal seasoning (ex: oregano, thyme, italian blend)
- 1 tsp minced garlic or about 1 clove
- 1 heaping tsp dijon mustard
- pinch of salt and pepper to taste
Add all ingredients to a mini food processor, blender, or shaker bottle. Mix and serve!
Stores in an airtight container in the refrigerator for about a week.
